Her famed kitchen has been a fixture on the roadside on the A361 between the Frome Flyer and Beckington for the past twenty years

Amanda's kitchen first opened the shutters on 15th July 2002 - a leap of faith which paid off due a huge amount of hard work, a loyal band of customers and her monster sized sandwiches.

Happy Anniversary to Amanda Bennett - who is planning on carrying on her catering business unless her lottery numbers come in.

In the decades since she began she has seen off competition from national chains, and describes her pitch, and her regulars, as the best in the business.

She told Nub News in the beginning she started with a van full of doubts: " I juggled my finances to see if 'The burger queen' could work and 'should I ? Or shouldn't I? I took the plunge. With a name change to Amanda's Snacks and then onto Amanda's Kitchen , 20 years later I'm still cooking up a storm and what my customers would describe as monster sized sandwiches."

In the early days the going was so tough her mum Val came up to the roadside everyday for about four months after she finished work as a post lady to lend her support.

Amanda added : " Even now she talks about how she was so scared I wouldn't be able to pay my mortgage but how proud she is of what I've achieved. So… after all these years and fighting off Greggs, Subway, M&S food hall all which set up within two miles of my pitch. Amanda's Kitchen is the best place to be, so much banter and smiles, some customers even say they come for the entertainment, the laughs and to get rid of their stresses as well as the amazing food of course!

"This little lay-by has seen and heard some weird and wonderful tales. I can't see myself doing any other job now, I've made some amazing friends and still have regulars that have been loyal for the last 20 years too, this pitch is lovingly known as Amanda's lay-by.

" I am the proud owner of Amanda's Kitchen , through thick and thin it's the one place I can rely on to put a smile on my face with the array of customers that join me there and they pay my bills for too!!

"So it's thanks to them that I have achieved all I have and have all these wrinkles from smiling and laughing along with them, these old bones ache a little now but here's to the next 20 years of Amanda's Kitchen !"
